“In a Jam”… with Kentucky Jam Cake for Derby Day

It has been such a long time, again, since I’ve been here at Home and The Range! I truly don’t know why I stay away so long! Except for life interruptions that come along, just can’t think of a good reason! The day of Kentucky Derby seems a good day to come back for a visit, a share, and hopefully a longer stay and not just a visit!

All things Kentucky, I thought, would be fitting. I thought to myself, ‘self….this would be a good time to make Kentucky Jam Cake’!

I have been in Kentucky for nearly 4 1/2 years . It’s about time I make Kentucky Jam Cake! Why have I waited so long? It was a hit with Poppy. He said…”I will miss this cake when it’s all gone”. It’s a new fave! 

I would describe this cake as…

A surprisingly tasty spice cake with an ever-so slight hint of sweet blackberry, resembling gingerbread, with a twist.

The caramel frosting is a complimentary flavor, although a bit tricky to get the texture right for spreading consistency. I adjusted the caramel frosting recipe to make it more spreadable. The result…penuche frosting, which I thought appropriate because it reminds me of a southern pecan praline. Pecans on top would be a nice touch and I will do that next time. April 2016 039


While the cake is a nod to The Kentucky Derby I could not help but think of the song….”Friendship”, because, of course, it begins with…

“If you’re ever in a jam”..

Okay…back to Derby and Cake talk!

The cake was quite easy to make. One tip I would give is to be careful not to add too much air.  Fold the jam in gently and after pouring the batter into the cake pans, be sure to tap the bottom of the cake pans against a counter several times to release the air bubbles before baking.

The crafting of Kentucky Jam Cake…

Although I will not be going to see the race today I did take advantage of the opportunity to see the making of the “Run for The Roses” garland that will be placed on the  Kentucky Derby winner. There will be more than 450 roses in the garland. It was great to see the start of the process and see how each rose is placed in the garland. It is wonderful that they allow the community to take part by being invited to view the crafting of this beautiful part of the Kentucky Derby.

My Mother has inspired me in so many ways. She has been a dedicated and devoted woman, Wife and Mother and I am thankful for her. I am also thankful for the blessings of Motherhood. I have been blessed with children and grandchildren that I adore…they are my life!

Each year, as this day draws near, I reflect on the journey and every thankful day and moment of having my Mother…and of being a Mother.

Blessed…I am!

Little CakesThese little cakes are so tasty! I came up with a recipe…without the bananas! Who always has bananas…at just the right stage of ripeness? These are tasty…and still have banana flavor (not sharing the secret just yet). They are frosted with my new version of Pecan Praline Frosting…and I wish my Mamma was here to enjoy them. She is pleased that I made them for her anyway.

The past week, for me, has been a time of reflection and gratitude. A time to look back over the past year,

a Celebration of a Season of Love!

We don’t always realize how much prayer can affect our lives.

Even when we are too weak to pray….

there is power in the prayers offered in our behalf.

I know this! I have seen it in my life!

One year ago….my Grandson battled for his life….in a coma….

while all of us that love him….prayed.

Eleven days in a coma! No one….ever….gave up!

It was a powerful experience!

God does answer our prayers….and when we don’t have the strength

or ability to pray for ourselves…He is still there with us…

answering the prayers of those who love us enough…

to keep praying…and never give up on us!

While remembering this life changing event….

I thought of many people that I know…with their struggles…

and how their lives might change…if there were enough prayers offered in their behalf!

We should always remember to pray for those that may not believe,

that may be lost,

that may be hardened by life experiences.

Continue to pray….and pray some more! Never….give up!

Do you know someone…in need of prayer?

Offer it up…with love in your heart.

Let God work in their life…through you!

Let the coming year be a Season Of Love….

I am a person that always has many irons in the fire. So many ideas, so many things I want to make…and, sorry to say (maybe I have Attention Deficit Disorder?)….in my excitement for the project and anticipation of what the end result might be…I start projects that don’t get finished right away.

I made a Raggedy Ann and Andy for my sister for her birthday one year. I started another set, thinking that maybe one of my Granddaughters or Daughters might like to have them. But they have not had any attention in a while.

I guess I was thinking about them today because it is my sister’s birthday!

A Home and The Range Update….Mom ‘N Poppy’s Log, Silver Wings!

I’ve been away for a couple of weeks….and I’m back to my Kentucky home.

This post is a snapshot of my trip back to my ‘Utah Home’ (I also have an ‘Arizona Home’) and some notes about family…and blessings.

My Brothers, Sister and Brother-In-Law, some of their family and my Parents live at my old stomping grounds in Utah.

Utah Home…just below Horseshoe Mountain.

The trip…

My Sister had a hysterectomy and I was there to help during her recovery.

My Sister…

I call my Sister ‘Debaroo’ because she has a lot to carry around in her pouch! She has two boys that have Muscular Dystrophy and she has been raising three Grandchildren…a bit much to handle after surgery. I am so thankful I was there to lighten the load so that Debaroo could focus on healing and recovery. It was a blessing to me… spending time with family. Surgery and recovery went well.

About those Nephews of mine….

They are amazing! They have both outlived their life expectancy…something I attribute to the love and care of their Parents, Family and to their attitude, faith and loving spirit. They are such a blessing to our Family!

Dustin had been on oxygen for the past month…following an episode of pneumonia. It was quite probable that he would be on oxygen for the remainder of his life. Once again…he has amazed us and he is no longer on oxygen! That was a wonderful day!

Little Tommy….so happy that Uncle Dustin no longer has the oxygen tank!

Dad and Mom …

Still sewing…at 82 years of age!

Mom loves keeping up the yard and making it look spiffy!

Both of my Parents have had life threatening illnesses and conditions over the past couple of years. It was a blessing to see them both being active and doing well.

Some nice surprises…

I had a birthday while I was away. Dad and Mom brought cake up to my Sister’s home and Dad made his famous, scrumptious homemade ice cream for me. YUM!

They call me ‘Aunt Vickie’ in those parts!

I don’t always get to see both of my Brothers while I am in Utah so it was great to be able to see them both on this trip.  I also got to see a Nephew that I haven’t seen in several years…Damian. He is a Border Patrol Agent in Arizona and we don’t see him very often. We were all excited to see him walk up the sidewalk…a very nice surprise!

Tuesday, June 5th…

My last day in Utah…sad goodbye’s. At the same time…we thought of the song ‘Silver Wings’…started to sing it…and started to cry. We are such softies…geeze! Goodbyes are always difficult…when you love someone so much! I boarded the plane…looked out at the wing…well, I guess you know the rest of the story!

Silver Wings….shining in the sunlight….roaring engines….are taking me away, leaving me lonely….

Feeling Blue! Photo Challenge…the color blue!

Yes…another photo challenge. This week…the color blue. And…what does that color mean to you?

Blue, my favorite color. All shades of blue!

What does the color blue mean ?

It is curious to me that we use the phrase…”feeling bluewhen we are sad…and yet the color blue symbolizes happiness, peace, tranquility and calm.

In nature…

The Promise of Blue!

We get some pretty crazy storms here in Kentucky! The clouds are amazing! They roll on through like a freight train. I took this photo just after a recent storm. You can see the black clouds rolling on out, letting a patch of blue peak through…a promise of the calm…the promise of blue.

I came upon this poor little baby…fallen from it’s Mama’s nest!

I picked up this fallen baby egg and admired the perfect shape and color. I felt…blue! I couldn’t part with it for days. I put it in the egg tray in my refrigerator…just so that I could admire its perfect little self for a while! It was bigger than I thought a Robin’s egg might be and yet so small.

According to color wheel color meanings…

Blue is the color of the sky and sea. It is often associated with depth and stability. It symbolizes trust, loyalty, wisdom, confidence, intelligence, faith, truth, and heaven.

Blue is considered beneficial to the mind and body. It slows human metabolism and produces a calming effect. Blue is strongly associated with tranquility and calmness. In heraldry, blue is used to symbolize piety and sincerity.

You can use blue to promote products and services related to cleanliness and is used to symbolize air, sky, water and sea.  As opposed to emotionally warm colors like red, orange, and yellow; blue is linked to consciousness and intellect. Use blue to suggest precision when promoting high-tech products.

Blue is a masculine color; according to studies, it is highly accepted among males. Dark blue is associated with depth, expertise, and stability; it is a preferred color for corporate America.

Avoid using blue when promoting food and cooking, because blue suppresses appetite. When used together with warm colors like yellow or red, blue can create high-impact, vibrant designs; for example, blueyellowred is a perfect color scheme for a superhero.

Light blue is associated with health, healing, tranquility, understanding, and softness. Dark blue represents knowledge, power, integrity, and seriousness.

I started thinking…just how many shades of blue there might be.

Wild Blue Yonder

Did you have the big box of 64 colors when you were a kid?

Tomorrow…my wrap up on blue, beautiful blue and some blueberry goodies.  Meanwhile, I am off  to create a new diet….The Blue Diet. I know it will be a winner! But while I am doing my research and development I will bake something with blueberries in it…and I certainly will wear something blue with yellow and red, so as to, at least, be a chubby baking super hero!

Photo Challenge Post….Out of Focus!

The photo challenge topic this week is….

Out of Focus!

Funny! What comes to my mind is…Hocus Pocus!

On a more serious note, I contemplate how things in our lives, at times, seem to be out of focus.

I looked at my photos…

What Lies Beyond The Boundaries….

And I thought…

Often we think that our lives are out of focus, out of control, in a state of turmoil or chaos.

Yet…the things that are out of focus are really within our reach.  Sometimes what we place in the forefront of our lives…causes the imbalance. It is a self-imposed

‘boundary’, perhaps. When we shift our ‘focus’ or our attention or intentions to what lies just beyond the ‘boundary’…things become very clear!

A better view…now I see the trees!

The first photo has a definite ‘focus’ on the boundary, while the trees, what lies beyond the boundary…

is out of focus!

In the second photo…what held my view and held me back, the boundary….is no longer the focal point. What

used to be in the forefront…now fades away.

Another thought…

When we allow our ‘view’ or perception of what is going on around us to remain out of focus we lose a lot of

the details. Sometimes those details are what allow us

to enjoy the moment.

Missing the details!

When I look at the crazy knotted up branch of this tree….I missed a lot of the beautiful detail of the ‘whole’.

So much more to that tree!

But when I take a step  back and make a slight adjustment…there is so much more to it! Now there is more

color, more life, more to enjoy! And somehow…even the twisted branch adds a lot to the overall picture.

That is life! Sometimes the knotted up places, that sometimes feel like there is nothing beyond that painful

moment, are, in fact, what adds character and dimension and beauty to our lives!

Have you ever heard the expression…the Devil is in the details? I believe that means, in general, that the

details always mess things up!

Hmmm….maybe not!

Or, at least, not this time!

Wishing you clarity, focus, peace of mind…

and Angels…in the details of your  life!
